Default Re: Cooking/Frying/Grilling Fish

Now some of you Good Ole Southern Boys & Girls must have had this wonderful meal of Catfish Stew growing up in South Carolina and other parts of the South? My grandfather, my daddy, and my sweet mother could cook a Catfish Stew that would knock your socks off!!!

I can't be the only one out there who has tried and loves this wonderful stew? Can I get an "Amen" from some of you that came up loving and catching fish and/or frying or cooking them in the way your family liked best!

Grilling fish is great, but those of us that grew up hard and did not know or have grills to cook fish on back then - did what 95% of the rest of town/mill villages did and fried our fish or sometimes made a catfish stew.

Tilapia live in fresh or brackish water. There is nothing wrong with wild caught tilapia, they aren't bottom feeders, so not sure where the filter comment comes from. It is the pollution that exists in tilapia aquaculture that is the problem.

5 lb catfish, 3 lb potatoes, 2 pounds onion. Oniion and potato finely diced. 1/2 lb bacon (or fatback), if you use fatback leave it in strips so you can take it out after fat is rendered, 1 stick butter, 3 cups Ketchup, 3 cups crushed tomatoes, tablespoon salt, tabespoon black pepper, 1/4 cup worcestershire, 1 teaspoon cayenne.

Boil catfish, drain but save the water, then debone.
Put onions, butter, bacon, spices and worcestershire in stock pot and cook until onions begin to brown.

Add stock and potatoes, cook until potatoes begin to soften.

Add ketchup and tomotoes, and catfish, cook about 20 minutes at a slow simmer.

I also like to add different chili peppers. Leave out the cayenne and replace with dried ground hatch chilis or chipotle.

Serve with buttered and grilled french bread.

House Autry, for the breeder. Picture posting from an iPad sux any bottom fish is good. Sheepshead and Black Sea Bass are some of my personal favorites.
