Default Pressure Cookers

Got an electric pressure cooker for Christmas. Never used one before. I get the concept, but have no idea khow to pull it off. Anybody got any advice, recipes, tips, etc?

Lot safer than they used to be. When I was a kid dad used it to make boiled peanuts. Made them perfect in a fraction of the time! To start with though use the recipes that came with your pot.

i got an induction one for the nuwave. It's great for stews, pot roast, lamb shanks, corned beef... really cuts down the cooking time.

I have an instapot and use it quite frequently. I've used it for a butt, roast, soup, spaghetti (from 'scratch'), chicken, and a few more things. It's worth the money and extremely easy to use. I did have one prior to the instapot, I think it was called Powercooker or something like that, and it completely died on me after only a few uses.

I've been really interested in getting a sous vide and pressure cooker for awhile. The wife is against it, due to them being yet another appliance to take up counter space.

If you also got a Phillips Pasta Maker, you straight up stole all my Christmas presents this year

No pasta maker. I have a kitchenaid mixer and the paster roller/fettuccine cutter attachments which work great. I wish I had other cutters though for macaroni and rigatoni and things like that. There's always next year.

I wouldn't mind having a sous vide machine myself. I cooked some steaks using the method using just a regular pot of water and a thermometer. It was certainly very tasty.

The sous vide is turning into my new favorite thing. I went shopping and stocked up on meats that were on sale and vacuum sealed the portions yesterday. Now I can just pop them in the water and have most of dinner ready when I get home. I made old fashions in some mason jars this weekend that were great. Bourbon, orange zest, cherries, sugar and bitters in the sous vide at 130 degrees for an hour or two. Now I can just pour over ice block after a long day. I'm getting hooked on what I can do with this thing.

So I did a chuck roast in the sous vide at 140 degrees for 18 hours and holy crap it was good. Amazingly tender but not falling apart shredded mush, still had its original shape and form, but I could cut it with my fork. I think that's what the expensive restaurants are doing with the "cheap" cuts to make them so damn good. The people on the sous vide blogs that say chuck roast can be turned into prime rib this way are full of bologna though, it still taste like pot roast, but the texture and moisture was better than any pot roast I've ever had. Now I want to do some short ribs and see how they stack up to some of the eateries I've gotten them from.

Ok, those that said boiled peanuts would be good in the pressure cooker were dead on. Did two batches today and they were awesome. Only took an hour. I love this pressure cooker.

Anything you need to roast for an extended time can be converted to the pressure cooker. For example, I do pot roast in their. Just add some liquid. You can use broth, beer, wine, or just about any cooking liquid. Going for about 30 minutes equals slow roasting for about 2-3 hours. Then I just let it finish for 30 minutes in an open roasting pan in the oven or on the grill. Works really well with beef short ribs.

Also really good for infusing a lot of flavor. I like to char some peppers on the grill, then cut a butt into 3"cubes, add cilantro, garlic, tomatoes and chicken broth. Great just like that, then I will throw the leftovers on a griddle for tacos the next day.
