Default Re: Vinegar Based BBQ Sauce

2 cups cider vinegar.
1 tablespoon sea salt.
1 tablespoon ground white pepper.
1 tablespoon red pepper flakes.
2 tablespoons white sugar.
1/4 cup dark brown sugar.
1 teaspoon freshly ground black pepper.
1/2 cup ketchup.

Mix all ingredients together and let sit 10 minutes. Add to chopped barbecue when hot to season the meat and keep it from drying out.

This sauce keeps indefinitely in the refrigerator, but be forewarned that the longer it sits, the hotter it gets as the heat from the peppers leeches out into the sauce. If you have sauce that has sat for a long time and you don't like it too peppery, cut the sauce with another 2 cups of vinegar, 1/2 cup ketchup, and 1/4 cup dark brown sugar.


1-1/2 cups distilled white or cider vinegar
10 tablespoons tomato catsup
Salt to taste, if desired
1/2 teaspoon cayenne pepper
Pinch of crushed hot red pepper flakes
1 tablespoon sugar
1/2 cup water
Freshly ground pepper to taste

Combine all ingredients in a small saucepan and bring to a simmer. Cook, stirring, until the sugar dissolves. Remove from the heat and let stand until cool. Spoon a small amount of the sauce over barbecued meats. Yield: three cups.

Love this sauce, I know someone who cooked up some center cut thin pork chops using this. You take the chops, salt and pepper them, and let em sit for 10 minutes , then put them in a ziploc bag, and add this sauce in, zip, and shake, let it sit for 20 minutes to marinade. By that time your grill should be ready. Grill em up, and it's some dang good chops, have to be center cut thin though, the meat thinness helps even out the flavor of the sauce, and meat. I think he let his sit overnight in the fridge because I can't get that same balance of taste like he gets with his.

Crazy thing is, I grew up about 15 miles down the road and never went until I was out of college. Rodney Scott is a helluva nice guy. If you ever make it over there, walk over to the pit house and look around. I can guarantee you they'll invite you in and maybe even give you some straight off the pit. Great people.

No kidding? I grew up in Johnsonville, SC, literally right up the road and across the county line from Scott's. The entire Scott family is great people. Any time I'm home I always try to make it down there. It gets crazy around the holiday season...lines will literally wrap around the store and up the street.

You right about that...bout the only thing I could tolerate when living in Florence. But the hash in the midlands is way more better than the liver hash they serve in those parts. All the other stuff is delicious though, and the liver hash isn't terrible, just not as good.

Here's an easy one (from The Skylight Inn in Ayden NC)

1 gallon apple cider vinegar
1 1/3 cup Texas Pete sauce
1/4 cup black pepper
1/4 cup salt

Mix and let stand 4 hours. No refrigeration needed
