Arrow Vinegar Based BBQ Sauce

I'm in the process of making my own BBQ sauces. I want to perfect the Mustard based(Check), Tomato based(Check) and Vinegar based sauces to have in my house at all times. Once I have one of each, I'll go back and make a HOT version.

What I'm looking for now is a Vinegar based sauce, like the Pee Dee BBQ Sauce.

That is the easiest of all the sauces you will make. Here is a good starting point: http://allrecipes.com/Recipe/Eastern...ina-BBQ-Sauce/. I usually add some of the same pepper vinegar that I use for greens. I like to throw in some mixed whole peppercorns and whole pickled garlic too. Granulated onion can be nice. Beyond the base it is just what appeals to your own taste.

Nice thing about vinegar based sauce is all the hot stuff settles in the bottom of the bottle. If you want it hot, shake the bottle prior to using.

That's what I was looking for. Just a basic sauce I can adjust along the way. Made this one already, will let it sit overnight. Used Cholulu instead of Tabasco

We made this stuff in volume in a pot for basting while cooking the hogs for our parties back in the day. It would be heated to marry ingredients/dissolve salt. I'll try to break it down to a smaller amount.
1 cup white vinegar
1 bottle rice vinegar
1 table spoon of salt
1 teaspoon cayanne
1 tablespoon red pepper flakes
1-2 tablespoon Tabasco
1/2-1 teaspoon brwn sugar. Do this by taste after other ingredients are warmed. The rice vinegar is already a little sweet and you dont want to over do it.
Rice vinegar is the key becauce cider vinegar doesn't keep well, imo.

Grew up next door to a family from Goldsboro NC. This was their recipe....Or something close to it

Apple vinegar
White vinegar
Crushed red pepper
Dry Mustard
Tabasco sauce
Boil on the stovetop

I usually play around with the amounts used to get it right.

I have done that with good results. Using a blend of vinegars gives layers of flavors though. Complexity is a good thing. To give mine a further boost I use Bragg's. It isn't a pretty clear vinegar that you buy in stores though. It is raw, unfiltered, and cloudy. I like it.

I recently started making my own vinegar sauce. I was surprised how easy it was to make. Found a recipe on line. Similar to what others have posted above.

My family loves it. I have made the basic version a few times and will start experimenting a bit from there.

This is what I use as a start. Can't remember what website I got it from, but its been a good one.

Hey Travelin, how 'bout PMing me those mustard and tomato based recipes you've mastered. I don't have either of those down pat yet.

Low Country Vinegar based BBQ Sauce Recipe
Ingredients:
1 cup cider vinegar
1/4 cup brown sugar
1 tsp crushed red pepper flakes
1 tsp cayenne pepper
1/2 tsp salt
1/2 tsp pepper
Directions:
Basically just mix all of the ingredients together and let stand for at about 4 hours for full flavor so the spices can fully soak in. If you don't like the stronger flavor of cider vinegar, replace it with white vinegar. Or, even add another cup of white vinegar to the cider vinegar and double all the other ingredients. **I add a little apple juice, garlic powder and other seasonings also.

I used to make my own but Scott's (out of Goldsboro) is damn good, so I just use that now for my shoulders. If I was doing whole hog, I'd likely still make my own since it requires more sauce.

WTF kind of sauce are y'all making? A vinegar sauce is supposed to taste exactly like that: tart and tangy. If you are adding a ton of sugar to it you might as well go ahead and make a KC sauce or some such.

I agree. I've always heard that it's 1 tablespoon of sugar per cup of vinegar. Although i will say that some of the vinegar based sauces in Northeast SC like Schoolhouse BBQ do have a little sweetness under their tangyness.

Actually looking at the recipe in more detail I do use 1/4 brown sugar but use 3 cups vinegar. So it's actually less sugar overall.

Also I do not boil. Just heat it up enough for everything to dissolves. I do like it tart and tangy. I'm still learning so any other pointers anyone has is appreciated.
